Quinoa is so good for you! The arugula gives this salad an extra bit of flavour.
This salad can be served warm or cold; if you want it warm, just cook the vegetables lightly over the stove for a minute or two before mixing everything together.

Ingredients
1 cup quinoa, cooked
1 1/2 cups trimmed arugula
1 cup grape tomatoes, halved
1/2 cup chopped red bell pepper
2 tablespoons chopped fresh basil
2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons crumbled goat cheese
Preparation
1. Cook quinoa according to package directions.
2. Combine quinoa and the next 4 ingredients in a large bowl; toss well.
3. Combine vinegar, oil, salt, and black pepper in a small bowl,
stirring with a whisk. Drizzle vinegar mixture over quinoa mixture; toss
well to coat. Sprinkle with cheese.
